Pita

Whole Wheat Pita

Sponge:

1.92 lb whole wheat flour

2.12 lb warm water

2 tsp yeast

  • mix all ingredients and let sit, covered for 30 minutes
Final Dough:

2 lb whole wheat flour
1.4 lb water
2 Tbsp salt
  • mix final ingredients with sponge and let sit, covered for 90 minutes
  • cut and shape dough into 3 oz balls
  • let proof for 15 minutes
  • pre-heat oven to 500* F (preferably with a pizza stone)
  • roll out dough with flour and bake for 3 minutes each
  • Let cool and enjoy!
