Whole Wheat Pita
Sponge:
1.92 lb whole wheat flour
2.12 lb warm water
2 tsp yeast
- mix all ingredients and let sit, covered for 30 minutes
Final Dough:
2 lb whole wheat flour
1.4 lb water
2 Tbsp salt
- mix final ingredients with sponge and let sit, covered for 90 minutes
- cut and shape dough into 3 oz balls
- let proof for 15 minutes
- pre-heat oven to 500* F (preferably with a pizza stone)
- roll out dough with flour and bake for 3 minutes each
- Let cool and enjoy!
