Banana Bread


1/2 C water
2 Tbsp egg replacer
1 1/4 C cane sugar
3/4 C oil
1 Tbsp lemon juice
1.15 lb pureed bananas
3 C all purpose flour
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 C chopped walnuts

preheat oven to 325* F
whisk egg replacer in water until bubbly
cream sugar and oil
add lemon juice and egg replacer
add banana, mix
add dry ingredients
fold in walnuts
divide into 2 loaf pans
bake for 60 minutes
